My research interests include new product development and byproduct utilization of renewable raw materials for food and industrial applications. Development of chemical modifications of fats and oils for value added applications as bioplasticizers, biolubricants, biofuels and chemical intermediates. Development of trans fat replacement solutions. Studies involving isolation, characterization, oxidative stability, shelf-life, synthesis, properties and functionality evaluations of fats/oils and other renewable materials.
